It's getting harder than ever to find a good value these days, but Roll-Em-Up Taquitos is a fun fast-casual concept that doesn't break the bank. As the name suggests, taquitos are the star of the show — not quite a taco, not quite a burrito, but something in between — with a choice of a crunchy corn tortilla or softer flour tortilla as your exterior. It's fried on the spot, enveloping a choice of fillings, from potato or cheese to ground beef, shredded beef, or chicken.

The taquitos are served in two, three, or four pack combos (with catering available for larger orders), but fair warning: each one is hearty and adds up fast, smothered in sauces (including an avocado crema) and sour cream. And that doesn't even include sides like rice, beans, or street corn. The nachos have a similar flavor profile, but are easier to share.

Roll-Em-Up Taquitos (a favorite of Las Vegas food writer Heidi Knapp Rinella) is a California-based concept that's growing quickly and making inroads in the Las Vegas Valley with a Henderson location near Galleria mall.
