The 2026 takeover of the UnCommons development’s Italian restaurant by Chef Nicole Brisson (who also runs Resorts World's amazing Italian restaurant Brezza), with veteran Strip chef Kyle Johnson overseeing the day-to-day operations, allows locals to enjoy some of Las Vegas’ best Italian cooking in the heart of the Southwest Valley

Since opening, Amari's focaccia bread and pizzas have been the low key stars of the show. The former is served with a choice of dipping sauces, while the latter are best described as heftier versions of traditional Neapolitan pies.

The restaurant’s Bolognese highlights beef, pork and veal. The squid ink seafood pasta is served with tomato uni butter. And the ricotta agnolotti are allowed to shine in a simple preparation of garlic, olive oil and espelette peppers. Meats include Chicken Parm, pork in cherry pepper relish and an Angus filet with salsa verde. And there's a wide variety of seafood.

The bar offers an exceptional amaro selection, heavy on unique fernets. The patio overlooking the UnCommons Quad is perfect for spring and fall days. And while prices are reasonable across the board, Brisson's addition of weekday lunch service and a solid Happy Hour menu make Amari especially approachable for first-time visitors.
