The Palazzo Location

Celebrity Chef Jose Andres’ decision to move his Las Vegas steakhouse from the Sahara to The Venetian was one of the biggest culinary stories of the 2025 on the Las Vegas Strip. Over the past four years, no restaurant has been mentioned more in the steakhouse section of our surveys that Bazaar Meat. The old location was beloved. But the new space exceeds expectations, with a dark modern lounge in the front, a brighter main dining room in front of the open kitchen and an amazing patio fronting Las Vegas Boulevard.

Just as importantly, food and service didn’t miss a step through the move. There may be no restaurant team on earth more educated on the science of beef – breeding it, raising it, slaughtering it, butchering it and cooking it. So there is no better place to find the best steak to suit your taste.

But this restaurant is so much more than a steakhouse. You’ll find touches of Andres’ avant garde genius in crazy dishes like foie gras cotton candy, or a puffy air bread filled with cheese foam and topped with slices of wagyu. Seafood is also amazing. And vegans in your group will fall in love with dishes like tomato tartare (which may be better than the steak version).
